(125 ml) de p\u00e2te de curry Singapour<\/li>\n<li>2 c. \u00e0 soupe (30 ml) de paprika<\/li>\n<li>2 bo\u00eetes de lait de coco<\/li>\n<li>8 feuilles de lime kaffir<\/li>\n<li>8 t. (2 litres) de bouillon de volaille<\/li>\n<li>1 c. \u00e0 th\u00e9 (5 ml) de sel<\/li>\n<li>3 c. \u00e0 soupe (45 ml) de sucre<\/li>\n<li>1\/3 t. (80 ml) de sauce poisson<\/li>\n<li>Poulet cuit ou crevettes au go\u00fbt (facultatif)<\/li>\n<\/ul>\n<h2>Pr\u00e9paration<\/h2>\n<ol>\n<li>Couvrir les vermicelles d&rsquo;eau froide et les laisser tremper pendant 1 heure.<\/li>\n<li>Dans un grand wok, mettre l&rsquo;huile \u00e0 chauffer et y faire revenir la p\u00e2te de curry rouge, le curry Singapour et le paprika pendant 3 minutes.<\/li>\n<li>Ajouter le lait de coco et les feuilles de lime kaffir, et amener \u00e0 \u00e9bullition.<\/li>\n<li>Ajouter le bouillon de volaille, le sel, le sucre et la sauce poisson, amener \u00e0 vive \u00e9bullition, retirer du feu et laisser reposer 5 minutes.<\/li>\n<li>Au moment du service, d\u00e9poser 1 t. (250 ml) de vermicelles de riz dans un bol \u00e0 soupe, ajouter un peu de poulet ou quelques crevettes (au go\u00fbt) et y verser la soupe bien chaude (tout en retirant les feuilles de kaffir).<\/li>\n<\/ol>\n<p>Servir aussit\u00f4t.<\/p>\n<p>Notes : Les feuilles de lime kaffir ont un parfum et un go\u00fbt particuliers qui rappelle un peu le \u00ab Pledge \u00bb (!), et ne se remplacent pas vraiment. Si on ne trouve pas de feuilles fra\u00eeches, on peut les remplacer par des feuilles s\u00e9ch\u00e9es, disponibles dans la plupart des \u00e9piceries fines.
