{"id":84,"date":"2010-03-29T19:14:00","date_gmt":"2010-03-30T00:14:00","guid":{"rendered":"http:\/\/www.pierrecastonguay.com\/recettes\/filet-de-porc-au-bleu-aux-noisettes-et-au-porto\/"},"modified":"2015-02-02T14:18:19","modified_gmt":"2015-02-02T19:18:19","slug":"filet-de-porc-au-bleu-aux-noisettes-et-au-porto","status":"publish","type":"post","link":"http:\/\/www.pierrecastonguay.com\/recettes\/filet-de-porc-au-bleu-aux-noisettes-et-au-porto\/","title":{"rendered":"Filet de porc au bleu, aux noisettes et au porto"},"content":{"rendered":"<p>Gracieuset\u00e9 d&rsquo;Andr\u00e9 Trudel, via Jos\u00e9e Di Stasio!<!--more--><\/p>\n<h2>Ingr\u00e9dients<\/h2>\n<div>\n<ul>\n<li>1 filet d\u2019huile d\u2019olive<\/li>\n<li>Un peu de beurre<\/li>\n<li>2 filets de porc du Qu\u00e9bec ( environ 335 g (12 oz) le filet )<\/li>\n<li>3 petites \u00e9chalotes fran\u00e7aises cisel\u00e9es finement<\/li>\n<li>1\/3 tasse de Porto<\/li>\n<li>1 tasse de bouillon de veau ou de boeuf ou de poulet<\/li>\n<li>1\/4 tasse de cr\u00e8me \u00e0 35% de m.g. ou 15 % champ\u00eatre<\/li>\n<li>2 1\/2 oz de fromage bleu \u00e0 la temp\u00e9rature ambiante<\/li>\n<li>20 noisettes r\u00f4ties* et hach\u00e9es grossi\u00e8rement<\/li>\n<li>Sel et poivre du moulin<\/li>\n<\/ul>\n<h2>Pr\u00e9paration<\/h2>\n<p>Pr\u00e9chauffer le four \u00e0 180 \u00b0C (350 \u00b0F).<\/p>\n<div>\n<ol>\n<li>Dans une po\u00eale, faire chauffer l\u2019huile et le beurre \u00e0 feu moyen-\u00e9lev\u00e9. Assaisonner et saisir les filets de porc de tous les c\u00f4t\u00e9s jusqu\u2019\u00e0 ce qu\u2019ils soient bien color\u00e9s. D\u00e9poser les filets dans un plat allant au four et poursuivre la cuisson pendant environ 15 minutes.<\/li>\n<li>Pendant ce temps, dans la m\u00eame po\u00eale, ajouter un peu de beurre et faire suer les \u00e9chalotes \u00e0 feu doux pendant environ 5 minutes.<\/li>\n<li>D\u00e9glacer avec le porto et laissez r\u00e9duire de moiti\u00e9. Ajouter ensuite le bouillon et laisser r\u00e9duire \u00e0 nouveau de moiti\u00e9.<\/li>\n<li>Dans un bol, m\u00e9langer la cr\u00e8me et le fromage bleu jusqu\u2019\u00e0 consistance homog\u00e8ne en prenant soin de laisser quelques morceaux de fromage. Ajouter les noisettes et bien m\u00e9langer.<\/li>\n<li>Incorporer cette pr\u00e9paration \u00e0 la sauce et m\u00e9langer doucement. Laissez r\u00e9duire encore quelques minutes.<\/li>\n<li>Retirer les filets de porcs du four, les couvrir et laisser reposer de 5 \u00e0 10 minutes.<\/li>\n<li>Trancher les filets en m\u00e9daillons et r\u00e9partir dans les assiettes.<\/li>\n<li>Napper chaque portion de sauce fumante et garnir de quelques noisettes enti\u00e8res et si d\u00e9sir\u00e9, de quelques morceaux de fromage\u2026<\/li>\n<\/ol>\n<\/div>\n<p>Accompagner de pur\u00e9e de patates douces, de haricots verts ou d\u2019un autre l\u00e9gume vert.<\/p>\n<p>NOTE : La temp\u00e9rature interne du filet de
